Food combining: | Don’t sweat It . NE OF THE things I’m most often asked about on su- permarket tours is "Food Combining." You know - not eating meat with starches, balancing acid and alkali foods, or saying that your body can’t digest certain combinations of foods. It’s a nutrition theory that seems to be "recycled" every 10 years or so, About a decade ago it was popular as the "Beverly Hills Diet", while it’s currently known as the "Fit for Life Diet." So what’s the problem with "Food Combining"? Plain and simple, it just has no effect. Our digestive system has 3 main functions: Breaking down our food, absorbing the nutrients, and (to put it deli- cately) eliminating the waste products of digestion. When we eat food, we break it down by chewing it up and then churning it around in our stomachs. That makes it easy for our digestive enzymes 10 - break it down to the point where we can absorb it. Our digestive system is designed to deal with all kinds of food mixed together. It. churns everything up together and then all of the necessary enzymes. are excreted willy- nilly. And what starts it all going? The presence of plain oid FOOD in our stomachs. So what's the problem with "Food Combining"? Well, your stomach is acid because the protein enzymes work best in an acid environment. The acid — your:,stomach produces will depend on the acidity of your meal. The stomach always aims for.a very high acidity to let the protein. enzymes do their best work. As the stomach empties its contents into the intestine, a change takes place: The pan- creas neutralizes the acid by pumping in bicarbonate. We already spend enough of our busy lives shopping, cleaning, and preparing our foods. Do we reaily need the added hassles of only cating food "A" with food "B" but not with food "C"?
