Gastronomique, “The famous mustard has, quite rightly,
for centuries been considered the best." Dijon mustard
combines white and black mustard seeds, often with
herbs added, atid the mustard gets its unique flavor from
verjuice, an acid extracted from unripened grapes. This
quality mustard is readily available in the U.S. packed
in distinctive, decorative jars or crocks.

The fine chickens of Burgundy team with the mustard
in “Poulet Dijan,” a regional classic and a superb dish
for your text buffet supper or dinner party, The chicken
is flavored with a savory mixture of mustard, chopped
onion, garlic ‘and parsley. The ingredient list is short;
the chicken Is easy to prepare; even a novice cook can
lum cut a splendid version of this French classic,

POULET DIJON
(Makes about & servings)
2 chickens, quartered, about 3 Ibs. each

Salt and pepper
1/4 eup butter

2 tablespoons Dijon mustard

1 clove garlic, chopped
1 amall onion, chopped

lean (10 1/2 oz,) condensed chicken broth

1 tablespoon flour

2 tableapoons finely chopped parsley*

Sprinkle chicken on all sides with salt and pepper. In
large skillet heat butter and brown chicken pieces slowly
on all sides, In small bowl, mix remaining ingredlents until
well blended. Pour mixture over chicken, Simmer, turning,
pieces occasionally until chicken is tender, about 40°
minutes. Remove chicken to platter. Stir pan juices
scraping all brown particles from: skillet, Simmer until

sauce is slightly thickened.

Spoon sauce over chicken,

Serve with hot petits pois and Champignons de Paris.
