WEST AFRICAN

GROUNDNUT STEW

. INGREDIENTS

1 stewing chicken - cut up’.
4c water .
1 stalk celery
1 tap salt :
2 large onions (sliced)

4 tbsp. fat
¥% cup. peanut butter
3 or 4 thsp, flour

1 or 2-crinkled chili peppevs

1 green pepper (cut-in etrips)

5.or 6 hard cooked eggs,

DIRECTIONS |
“Cut up chicken and cover with
water. Add salt and celery.

_ Boll gently until tender. Drain

and save the stock,
Fry onions until tender and
golden in the fat.

Mix flour with the peanut
butter - add 34 of the stock and

Place chicken in casgerole.or
large pot. Spread with fried

* onions and green pepper strips.

Add peanut butter mixture.

Cook 45 min. to one hour,

Before serving, add e; cut
in half and a Kittle more stock.
