Chef’s secret is ; his recipes

OTTAWA (CP) — Chef
Vincent Belle of the Chateau
Laurier Hotel has a secret
that has served him well
aver the years.

Foreign dignitaries who
marvel aver the delicacies of
thelr home countries, deftly
prepared for them by Bde,
frequently send for him to
compliment him on the
meal, They. all volea the
same questions: How did the
chef learn the favorite
recipes of thelr country?
Had he travelled there?

Rotund and genial Chef
Belle acknowledges the
compliments but keeps bis
secret,

During an interview in the
Chateau Laurier kitchen he
took out a small key,
unlocked a drawer, and

every country in the wor:

he sald, “That's my brine ”
Belle modestly made no

mention of the fact that all

the recipes in the world
won't enable anyone to turn
out an authentic native dish
without expertise.

Ttalian-born, he has been
with ‘Canadian National
Railways for 26 years, Most
of the time has been spent in
the kitchen of the Chateau
Laurier, a CN hotel, where
be has prepared meals

"He is not a fussy eater,”
said Belle. “He doesn’t ask
for special dishes,’’

menu is something special.

crumbled bacon and chives.
