Christmas in Sidney ——————————————————————— Village Gallery's Stuffed ‘shrooms 24 large mushrooms 2 tbsp. sour cream 1 green onion, chopped I tsp. parsley, chopped 2 cloves garlic, crushed white wine 1/2 cup white cheese, shredded 2 oz. crab meat 2 oz. shnmp meat 1/2 tsp. salt 1/8 tsp. pepper 2 tbsp. butter Remove stems from mushrooms. Chop finely and saute in butter. Cool. Wipe mushroom caps and arrange on a cookie sheet. To Sauteed mushroom stems add all the remaining ingredients except the white wine and cheese. Put 1 tsp. of the filling in each of the caps. Sprinkle with the shred- ded white cheese and then with the white wine. Cover pan with foil and bake at 375 degrees for 15 minutes, remove foil and bake another 15 minutes longer until browned on top. Spear cocktail picks in the caps and serve immediately. Process until well mixed. Put in fridge until firm enough to roll into a ball. Roll in chopped nuts or parsley. Enjoy on plain taco chips or crackers. Muffet and Louisa’s Christmas Fruit Salad 2 eggs, beaten 4 tbsp. lemon juice 4 tbsp. white sugar 2 tbsp. butter Cook eggs, sugar and lemon juice in double boiler. Stir until thick. Remove from heat. Add butter and cool. Prepare four to five cups of fruit — cherries, mandarin oranges, pineapple, green seedless grapes. Fruit cocktail may be used if desired but fresh fruit gives better flavor. Also add 2 1/2 cups minia- ture marshmallows. Beat 1 cup whipping cream. Fold in egg mixture. Fold in fruit mixture and marshmallows. May be used as dessert or as a Salad served with a meal. To mash put through a food processor or blender. Beat eggs first, then add sugar, syrup: and milk, mix well. Next add mashed carrots, vanilla, Spices and salt. Makes approx. 4 _pies. Pour the pie mixture into unbaked pie crust, as you would make a pumpkin pie. Bake at 250 until crust is brown and an inserted table knife comes out clean. Serve with Dream Whip or whipped cream.
