To-day, because many of you will have a super-

abundance of. Zuccini squash, I’d like to repeat a

~ marvelous recipe for Zuccini Bisque from Pam Poole.
_ This delectable thick soup may be frozen, and. is so

unusual that you could serve it-to Prince Charles, and
find him asking for more.

ZUCCINI BISQUE

2: tablespoons butter (or margerine 1 medium sized |
onion, chopped, 1 cup thinly sliced carrot, % cup diced
Zuccini, | can of chicken broth, % teaspoon sugar, %
teaspoon marjoram leaves, “% cup whipping cream.

Melt butter in a three-quart pan over medium heat.
Add onion, carrot and Zuccini. Cook till onion is limp.

Stir in- broth, sugar and marjoram. Cover, and let

simmer until vegetables are very tender. -
