excellent cheese souffle was given to me by Mrs. Richard
Field who, as Secretary of the local Wome: 's Institute, is
well-known in home-making circles in White Rock.
CHEESE SOUFFLE

Make a white sauce with 3 tablespoons flour, 3 table-
Spoons butter, % teaspoon salt, 1 cup milk. When cooked
add: 2 egg yolks and 1 cup of grated cheese. Cook until
set, then fold in very lightly stiffly-beaten whites of 3 eggs.
